How a wedding runs
We arrive early, site the oven where the venue and fire marshal are happy with it, and light the fire about an hour before service so it is at temperature. Pizzas come out continuously through cocktail hour and dinner, roughly ninety seconds apart, so nobody queues for long and nothing sits going cold.
Bonney Lake sits in Pierce County, so temporary food permits go through Tacoma-Pierce County Health Department, and open-flame cooking needs fire marshal sign-off. We carry our own licensing and deal with that paperwork.
