Plenty of the best venues around here have a warming kitchen or none at all. Lake Wilderness Lodge, Rivers Edge and most Woodinville tasting rooms all fall into that category. We arrive self-contained, which turns the venue's biggest limitation into a non-issue.
The oven runs hot and the pizzas come out roughly ninety seconds apart. Guests drift over and watch. It behaves like entertainment as much as dinner, which is why it works so well during cocktail hour.
Fabio is Italian, and the dough, the technique and the pace of service come with him. This is not a pizza-shaped catering tray delivered lukewarm in a van.
