Fifty minutes south-east of Tacoma. We cover all of it — Ohop Valley, the road to Rainier — and the oven sets up anywhere a trailer can park and a fire marshal will approve.

Eatonville sits in Pierce County, so temporary food service runs on a Temporary Food Establishment permit through the Tacoma-Pierce County Health Department. Open-flame approval runs through the local fire marshal. Pierce County venues almost never publish a policy, so it is settled per event. We carry our own licensing and insurance and handle this side, but venues will ask, and it is worth knowing the answer exists before the day.
We arrive early enough to site the oven, light the fire about an hour before service, and cook continuously — a pizza roughly every ninety seconds once the oven is at temperature. Guests watch the whole thing happen. When service ends we break down, pack out and leave the site as found. One invoice, the address on it.
