The state capital, close to home base, and — as of this season — down one competitor, because the main local wood-fired truck has announced it is out of service for 2026.
Half an hour south of Tacoma. We cover all of it — downtown Olympia, the Capitol campus, Eastside, Westside, Boston Harbor — and the oven sets up anywhere a trailer can park and a fire marshal will approve.
Street-side trucks and outside food allowed, with a published email.
In the East Downtown food-truck pod.
Verify before pitching — likely an in-house kitchen.
Year-round and one of the largest in the state, but the Prepared Food category is currently closed to new applicants.
Mid-July. Food concessions on Water Street are traditionally reserved for non-profits, so it is a hard entry.
Stone Creek Wood Fired Pizza, the established local operator since 2011, publishes pricing beginning at $3,500 with a hundred-guest minimum — but their own site states the pizza truck is getting some much needed care and is likely unavailable for 2026. That is a live opening in this market right now.
We publish this because you will find these operators anyway, and comparing openly beats pretending they do not exist. Our own comparisons are on the compare pages.
Olympia sits in Thurston County, so temporary food service runs on a Temporary Food Establishment permit through Thurston County Public Health and Social Services. Local fire marshal sign-off. We carry our own licensing and insurance and handle this side, but venues will ask, and it is worth knowing the answer exists before the day.
We arrive early enough to site the oven, light the fire about an hour before service, and cook continuously — a pizza roughly every ninety seconds once the oven is at temperature. Guests watch the whole thing happen. When service ends we break down, pack out and leave the site as found. One invoice, the address on it.
