Wood-fired pizza catering in Puyallup

Puyallup is fair country and farm-venue country, and it is also the home turf of the strongest wood-fired competitor in the South Sound.

Working Puyallup

About twenty minutes east of Tacoma on Highway 512. We cover all of it — downtown Puyallup, South Hill, Sumner Valley, the Puyallup Fairgrounds — and the oven sets up anywhere a trailer can park and a fire marshal will approve.

Event venues in and around Puyallup

What follows is not a directory scrape. We read each venue's published catering policy on 2026-08-31, and the notes below say what their own site actually states.

Rock Creek Gardens

2 to 250 guests. Their site states outside catering is not permitted, so this one is a preferred-list application rather than a direct booking.

Love’s Manor

175 guests.

Washington State Fair Events Center

Runs on an approved caterer list.

Breweries and taprooms that host food vendors

Top Down Brewing

Sumner. No in-house kitchen, daily rotating trucks, and a Book A Slot link on their food page.

Off Camber Brewing

Publishes a direct owner-level email for vendor enquiries.

McMillin Farm Brewhouse

Food-truck court area at farm events.

Markets and public events

Puyallup Farmers’ Market

April to October, Saturdays. One of the largest markets in the state. 2026 applications have closed.

The honest competitive picture here

Fat Zach’s is based here and runs three mobile wood-fired ovens alongside three restaurants. They publish a starting price of $18 per person with a $1,500 minimum. This is the hardest market in the region to win on scale, so it is won on the Italian angle and on service instead.

We publish this because you will find these operators anyway, and comparing openly beats pretending they do not exist. Our own comparisons are on the compare pages.

Permits and paperwork in Puyallup

Puyallup sits in Pierce County, so temporary food service runs on a Temporary Food Establishment permit through the Tacoma-Pierce County Health Department. Open-flame approval runs through the local fire marshal. Pierce County venues almost never publish a policy, so it is settled per event. We carry our own licensing and insurance and handle this side, but venues will ask, and it is worth knowing the answer exists before the day.

What an event in Puyallup looks like

We arrive early enough to site the oven, light the fire about an hour before service, and cook continuously — a pizza roughly every ninety seconds once the oven is at temperature. Guests watch the whole thing happen. When service ends we break down, pack out and leave the site as found. One invoice, the address on it.
