
Tacoma is where the oven lives, so this is the one city where a late booking is usually still possible and travel never appears on the quote.
Home base. No travel charge anywhere in the city. We cover all of it — Stadium District, North End, Proctor, Old Town, Hilltop, Point Ruston, Browns Point, the Foss Waterway — and the oven sets up anywhere a trailer can park and a fire marshal will approve.
What follows is not a directory scrape. We read each venue's published catering policy on 2026-08-31, and the notes below say what their own site actually states.
Up to 350 guests. Works from a partner-caterer list but states outside catering options are available.
40 to 400 seated, up to 500 for a reception. Events contact publishes an email.
120 to 200 guests. Preferred vendor list available on request.
180 guests. States you are welcome to use the licensed and insured caterer of your choice.
32 to 250 depending on the room.

Two locations, trucks during taproom hours. Booking is by phone.

April to September, Thursdays. $35 application fee and hot food is an accepted category.
Tacoma’s only year-round market. Requires a City of Tacoma business licence and UBI number.
Galileo’s already ranks on the first page of Google for pizza catering in Tacoma. Puget Sound Pizza and Cerello’s also rank, but both are delivery kitchens rather than on-site cooking.

Tacoma sits in Pierce County, so temporary food service runs on a Temporary Food Establishment permit through the Tacoma-Pierce County Health Department. Open-flame approval runs through the local fire marshal. Pierce County venues almost never publish a policy, so it is settled per event. We carry our own licensing and insurance and handle this side, but venues will ask, and it is worth knowing the answer exists before the day.
We arrive early enough to site the oven, light the fire about an hour before service, and cook continuously — a pizza roughly every ninety seconds once the oven is at temperature. Guests watch the whole thing happen. When service ends we break down, pack out and leave the site as found. One invoice, the address on it.
