States: we do not have facilities for cooking or food prep so you will want to choose someone who has either the ability to cook onsite in a self-contained trailer or the ability to keep food warmed. Gusto is already on their preferred list. Requires a $1M policy naming the venue and owners, and eight weeks pre-approval for a non-listed vendor.

How a wedding runs
We arrive early, site the oven where the venue and fire marshal are happy with it, and light the fire about an hour before service so it is at temperature. Pizzas come out continuously through cocktail hour and dinner, roughly ninety seconds apart, so nobody queues for long and nothing sits going cold.
Granite Falls sits in Snohomish County, so temporary food permits go through Snohomish County Health Department, and open-flame cooking needs fire marshal sign-off. We carry our own licensing and deal with that paperwork.
