Covington sits in King County, so temporary food service runs on a Temporary Food Establishment permit, applied for through Public Health — Seattle & King County. Open-flame and propane cooking is approved city by city. Seattle itself requires a Seattle Fire Department permit, with cylinders kept at least ten feet from tents and the public and no more than five on site. We carry our own licensing and insurance and handle this side, but venues will ask, and it is worth knowing the answer exists before the day.

What an event in Covington looks like

We arrive early enough to site the oven, light the fire about an hour before service, and cook continuously — a pizza roughly every ninety seconds once the oven is at temperature. Guests watch the whole thing happen. When service ends we break down, pack out and leave the site as found. One invoice, the address on it.
