The north end of the metro. A working port city with a waterfront concert series that only books three food vendors a night.
An hour and a half from Tacoma. We cover all of it — downtown Everett, the marina, Port Gardner, Silver Lake — and the oven sets up anywhere a trailer can park and a fire marshal will approve.
What follows is not a directory scrape. We read each venue's published catering policy on 2026-08-31, and the notes below say what their own site actually states.
100 including staff and musicians. States you are welcome to hire a caterer of your choice, with kitchen facilities and a barbecue on the covered deck.
Rotating trucks confirmed.
Trucks present, booking by phone.
Reported Wednesday, Friday and Saturday rotation.
Opens in May. 2026 applications closed in April.
Thursdays from early July, nine concerts. Limited to three food vendors and a dessert vendor per show, so slots are tight.
Smokin’ Dough runs a wood-fired trailer out of Everett, founded 2021, with a veteran-support angle.
We publish this because you will find these operators anyway, and comparing openly beats pretending they do not exist. Our own comparisons are on the compare pages.
Everett sits in Snohomish County, so temporary food service runs on a Temporary Food Establishment permit through the Snohomish County Health Department. Handled by the local fire marshal. Several Snohomish venues have no prep facilities at all, which makes a self-contained oven the easier answer rather than the harder one. We carry our own licensing and insurance and handle this side, but venues will ask, and it is worth knowing the answer exists before the day.
We arrive early enough to site the oven, light the fire about an hour before service, and cook continuously — a pizza roughly every ninety seconds once the oven is at temperature. Guests watch the whole thing happen. When service ends we break down, pack out and leave the site as found. One invoice, the address on it.
