Immediately east of Olympia on the I-5 corridor.
Thirty-five minutes south of Tacoma. We cover all of it — downtown Lacey, Hawks Prairie, Woodland Creek — and the oven sets up anywhere a trailer can park and a fire marshal will approve.
Coordinates a truck Thursday through Saturday.
Lacey sits in Thurston County, so temporary food service runs on a Temporary Food Establishment permit through Thurston County Public Health and Social Services. Local fire marshal sign-off. We carry our own licensing and insurance and handle this side, but venues will ask, and it is worth knowing the answer exists before the day.
We arrive early enough to site the oven, light the fire about an hour before service, and cook continuously — a pizza roughly every ninety seconds once the oven is at temperature. Guests watch the whole thing happen. When service ends we break down, pack out and leave the site as found. One invoice, the address on it.
