Forno Via is based here and publishes full pricing — $32 per guest for pizza only, $38 with a salad cart, $44 with tiramisu, on a forty-guest minimum, plus premium upgrades from $100 to $150. Lynnwood sits in Snohomish County, so temporary food service runs on a Temporary Food Establishment permit through the Snohomish County Health Department. Handled by the local fire marshal. Several Snohomish venues have no prep facilities at all, which makes a self-contained oven the easier answer rather than the harder one. We carry our own licensing and insurance and handle this side, but venues will ask, and it is worth knowing the answer exists before the day.
We arrive early enough to site the oven, light the fire about an hour before service, and cook continuously — a pizza roughly every ninety seconds once the oven is at temperature. Guests watch the whole thing happen. When service ends we break down, pack out and leave the site as found. One invoice, the address on it.
