Forty minutes south of Tacoma. We cover all of it — the Deschutes falls, the old brewery, Littlerock Road — and the oven sets up anywhere a trailer can park and a fire marshal will approve.

Mid-August. $400 flat fee per truck, and vendors must be fully self-sufficient because no power is provided — which suits a wood and propane rig better than most.

Tumwater sits in Thurston County, so temporary food service runs on a Temporary Food Establishment permit through Thurston County Public Health and Social Services. Local fire marshal sign-off. We carry our own licensing and insurance and handle this side, but venues will ask, and it is worth knowing the answer exists before the day.
We arrive early enough to site the oven, light the fire about an hour before service, and cook continuously — a pizza roughly every ninety seconds once the oven is at temperature. Guests watch the whole thing happen. When service ends we break down, pack out and leave the site as found. One invoice, the address on it.
