Ten minutes west of Tacoma. We cover all of it — Chambers Bay, Day Island, Sunset Beach — and the oven sets up anywhere a trailer can park and a fire marshal will approve.
What follows is not a directory scrape. We read each venue's published catering policy on 2026-08-31, and the notes below say what their own site actually states.
Do not pitch. Their own site states all food and beverage must be provided by Chambers Bay.
University Place sits in Pierce County, so temporary food service runs on a Temporary Food Establishment permit through the Tacoma-Pierce County Health Department. Open-flame approval runs through the local fire marshal. Pierce County venues almost never publish a policy, so it is settled per event. We carry our own licensing and insurance and handle this side, but venues will ask, and it is worth knowing the answer exists before the day.
We arrive early enough to site the oven, light the fire about an hour before service, and cook continuously — a pizza roughly every ninety seconds once the oven is at temperature. Guests watch the whole thing happen. When service ends we break down, pack out and leave the site as found. One invoice, the address on it.
