An hour and twenty from Tacoma. We cover all of it — downtown Edmonds, the waterfront, Perrinville, Westgate — and the oven sets up anywhere a trailer can park and a fire marshal will approve.
What follows is not a directory scrape. We read each venue's published catering policy on 2026-08-31, and the notes below say what their own site actually states.
220 seated, 300 standing. States you may choose any caterer you love, or bring your own. Worth knowing the first-floor commercial kitchen is off-limits to caterers and the second-floor kitchen is display-only, so an outdoor oven neatly sidesteps the problem.
No kitchen at all — relies entirely on rotating trucks.
May to October, Saturdays. Around ninety vendors and currently at capacity.
Father’s Day weekend. Only about twenty food vendor slots.
Edmonds sits in Snohomish County, so temporary food service runs on a Temporary Food Establishment permit through the Snohomish County Health Department. Handled by the local fire marshal. Several Snohomish venues have no prep facilities at all, which makes a self-contained oven the easier answer rather than the harder one. We carry our own licensing and insurance and handle this side, but venues will ask, and it is worth knowing the answer exists before the day.
We arrive early enough to site the oven, light the fire about an hour before service, and cook continuously — a pizza roughly every ninety seconds once the oven is at temperature. Guests watch the whole thing happen. When service ends we break down, pack out and leave the site as found. One invoice, the address on it.
