North of Seattle, and home to one of the most consistent nightly food-truck venues anywhere in the region.
An hour and ten from Tacoma. We cover all of it — Richmond Beach, Ridgecrest, Echo Lake — and the oven sets up anywhere a trailer can park and a fire marshal will approve.
A beer bar with no kitchen that has hosted trucks nightly from five to eight since 2015, with a live calendar and a published email. One of the strongest recurring approaches on the board.
June to October, Saturdays. Requires commercial liability insurance naming the market association as additional insured.
Shoreline sits in King County, so temporary food service runs on a Temporary Food Establishment permit, applied for through Public Health — Seattle & King County. Open-flame and propane cooking is approved city by city. Seattle itself requires a Seattle Fire Department permit, with cylinders kept at least ten feet from tents and the public and no more than five on site. We carry our own licensing and insurance and handle this side, but venues will ask, and it is worth knowing the answer exists before the day.
We arrive early enough to site the oven, light the fire about an hour before service, and cook continuously — a pizza roughly every ninety seconds once the oven is at temperature. Guests watch the whole thing happen. When service ends we break down, pack out and leave the site as found. One invoice, the address on it.
